If you prefer not to stay at that hotel we recommend Iberostar or Catalonia. There are so many other resorts out there that are fantastic. Most of them are all inclusive which means free food and alcohol. European plan includes breakfast and not much else. Places like the Mayan Palace have plenty of restaurants on site but none are included.
The Flight
Best airfare prices are said to be 90 days before the trip so that would be around February 20th.
Sun Country is the cheapest from MSP and SEA to CUN everyday except Tuesday.
Alaska Airlines travels to Cancun as well.
Delta goes through Atlanta
United goes through Dallas.

Car rental
We will have a car there to pick people up when they arrive so don't buy a transfer online. We will provide the transport to and from the airport. Most tours and activities they puck you up from the resort in a bus and you're on your way, so a car isn't really required. If you want a car to drive around there for the less touristy activities, the cars are cheap. Usually $20 or less a day. There is, however, a Mexican insurance that is required that is called TPL. It goes for somewhere around $30 a day, just keep in mind that it's not optional.
Money
Most credit cards are accepted and don't charge a fee check with your bank. Bank of america charges you for every transaction! Capitol one doesn't charge you anything, plus they'll give you the most favorable exchange rate. For example we bought a necklace in Chitzen Itza for $63 american, but when we got our statement I got charged $56. Woohoo!
Cash and beer are a great haggling tool for buying souvenirs so I recommend having some. Most banks let you order pesos prior to traveling. The service is usually free, but takes a few days.
Activities
Online buying is ok and usually the discounted price. The best deals we found is in downtown Cancun. The prices are usually half price from anywhere we found. The standard procedure is to pay half and then when you get picked up from the resort you pay the rest.
Cell phones
Mine doesn't work in Mexico. You can buy sim cards and phones to work in Mexico if you want. Wifi is all over down there but it also costs a few pesos.
Spanish
I took some in high school and was able to communicate on at least a kindergarten level. Its not required to know Spanish on the tours but I would recommend it if you are going to negotiate and tour the back streets.
Ripoffs
Mexico has tons of fakes of Oakleys and stuff. They're usually pretty good fakes, but they are fake. In downtown Cancun they are pretty active about getting your business. If you don't like being harassed don't go near them or ignore them. If you ignore them they will walk in front of you and stop. "No" in Spanish is also "no" in american, not that they'll respect it, but at least you know. Something that is common is Mexican vendors will hold up two big carvings or something and one tiny object and yell out "one dollar, one dollar" if you hand them a dollar then you've purchased the tiny item in his hand. It's pretty entertaining to take the little item you just bought and throw it as hard as you can and the vendor will chase it down. It's cheap entertainment.
